This wine has been produced under the strict control of CCPAE. Therefore, it strictly complies with the standards for organic wines. Our selection of the most characteristic vineyards of the Xarel.lo variety is very important. The production process has been aimed at preserving all its natural essence. Its fermentation has been carried out in stainless steel tanks at a low temperature, with the aim of maintaining the varietal presence and its freshness. Once the fermentation has finished, during the racking we try to keep the finest lees so that they help us for 2 months to carry out the batonage, to obtain more structure and complexity in the mouth. Then we finish with the final stabilization and filtration, prior to bottling. Serving temperature 10ºC.
