Elaboration
Fermentation and maceration with the skins for 5 days at 22ºC with two pump-overs per day and final fermentation in liquid phase at 18ºC to achieve a balance between structure and freshness. Part of the grapes were fermented by carbonic maceration. It was stabilised by cold and then lightly filtered before bottling.
